Chicken Saltimbocca
Ingredients: chicken breasts, goat cheese, prosciutto, fresh sage leaves, balsalmic vinegar and white wine. Preheat oven to 375 F. On each chicken breast layer two thick slices of goat cheese, then a large sage leaf and finally wrap with 1-2 slices of prosciutto. Cook for 1-1.5 hrs until cooked throughout. Meanwhile heat 1/2 cup of white wine and 1/4 cup of balsalmic vinegar to gentle boil until reduced to about 1/2, drizzle over chicken.
